Dinners At Our Home This Week

I decided to take a photo each night the last week of what we had for dinner.....

Last Thursday we had Chicken Pad Thai with Peanut Sauce. Except for the sauce, this is my own recipe.



Friday night is pizza night and we decided to grill them since the weather was so lovely. This is super easy, you just need to have all of your toppings ready to go, fast. Roll out the dough really thin, put it on the grill for only about 45 seconds, flip and top, then move to a cooler part of the grill and cover. I also had some dressed arugula and shaved Parmesan to garnish it with.


A lot of times Saturday dinners are grilling or fun dinners. This was a fun dinner, and was a copycat Chick-fil-A sandwich, with a side of potato chips.


Sunday we had a church picnic in the afternoon. When we either have our monthly fellowship meal or a summer picnic, we tend to go light for dinner. I went through the fridge and pantry, and came up with this charcuterie board.


Monday night it was Dasher's turn to make dinner and she made this lovely Chinese Chicken Salad. The dressing was soy sauce, vinegar, sesame oil, and a pinch of sriracha. She made it with iceberg lettuce, cilantro, green onions, chopped chicken and a scrunched bag of ramen.


Tuesday night we had stacked enchiladas. This was Nutsy's night to make dinner and she did a great job. Again I made this one up years ago - I layer tortillas that have been dipped in enchilada sauce with ground beef and cheddar. Then topped with extra sauce, cheese and olives. Served with rice and beans on the side.


And then we had Thai Steak Salad. This was from my trusty Cooking Light recipe book. Grilled flank steak over a bed of lettuce, julienned carrots and bean sprouts. With a vinegar, soy sauce, garlic, ginger, sriracha dressing.


And finally, this yummy Cicchetti I am working on. We were first introduced to Chicchetti when we were in Venice, and basically they are bite sized adventures.

These have goat cheese, prosciutto, arugula, and figs with a drizzle of honey. I am adding chopped bacon to it and these will be served at a church wine tasting event we are going to tomorrow.


And as you can see, I love to cook and we all love to eat delicious food.
