{#abcblogging} Q is for Quesadillas

Quesadillas are one of our family's favorite things to make. Sometimes they are very simple, other times they become more elaborate.

Here are some ideas.....

This first one is based on a recipe from Pioneer Woman.

My Sweetie starts up the grill and I cut up pineapple to skewer...

...and flatten out chicken breasts. I make my own seasoning mix with chili powder, cumin, garlic powder and a little salt, and give each a generous coat.

Both the pineapple and chicken go out on the grill.

The quesadillas are assembled, with cheese, sliced jalapenos, pineapple slices, the chicken, and some barbecue sauce.

These are cooked in butter (this makes the tortillas AMAZING) in my skillet until brown and crispy.


Another one that I might make for lunch is a mushroom quesadilla. The kids are not big mushroom fans so they will make themselves plain ol' cheese quesadillas, while I add one more step. I first saute mushrooms in butter until brown, then add these with the cheese into my tortilla. Sometimes at the end I add a handful of spinach to the pan.

And finally, something I created all on my own, Quesadilla Pie.

This thing is layers of quesadilla ingredients, which all gets baked in the oven. Pair it with some Spanish rice and you are in business.

So add some quesadillas to your meal plan this week!
