Eating Low Carb: 5 lunches

 My Sweetie and I eat low carb about 80% of the time. When eating this way, sometimes it can be hard to come up with meal ideas. So here were my lunches one week, to inspire you.

This was a taco bowl. I took ground beef and seasoned it with chili powder, garlic and cumin, then added black olives, a half an avocado, grated cheese and salsa.

Italian sausage bowl. This is sauteed Italian sausage with mini bell peppers over roasted cabbage.

This was a salad kit from the store. Sesame Asian flavors with kale and cabbage and I added chopped chicken.

Leftovers from dinner the night before: two barbecue chicken legs and some bell peppers on the side.

Here I have scrambled eggs with mushrooms, alongside my kale bacon salad.

All of these took just a few minutes to put together. I hope this inspires you!

Monday Musings (On a Tuesday)

What I'm thinking: That I am thankful that I can trust in God's perfect plan. I am thankful that I can truly never ever be out of his will, and also that He gives me grace to get through each day.

What I'm reading: I just finished reading Boy: Tales of Childhood and Going Solo by Roald Dahl. It is his autobiography and a really great story.

What I'm listening to: At this very moment I am listening to violin lessons. Nutsy is really enjoying playing and is doing well.

What we're learning: This week we are really pushing the 4-H presentations. Only two of them are doing presentations since I tell them that they don't have to do one their senior year.This year Nutsy is doing a demonstration on vegan cupcakes. Dasher is doing a very interesting illustrated talk on the Sacramento Rendering Plant.

What's cooking: This week I am making Pulled Asian Pork, Tilapia Curry, Beef Tacos, and Barbecue Chicken. I really love being in the kitchen.

What I'm buying: Valentine's treats. We really don't celebrate it but we are doing a Valentine exchange tonight at our 4-H club meeting.

What I'm creating: Vacation blog posts! I have been updating my other blog with stories from our recent trip.

What I'm praying: I am praying for those that are displaced right now because of the Oroville Dam. We do have some friends that had to leave and others that are on standby.

What I'm planning: My Sweetie and I need to spend some time tonight studying and going over our lesson for our Financial Peace Class. We have both been coordinating a class the last 5 weeks and have really enjoyed talking personal finances with our class each week.

What we did this last weekend: We ran errands all day Saturday, it seemed. Sunday we went to church and also Sunday School. That evening we had a nice relaxing evening with the girls.

What I'm looking forward to: Mr. Lego coming home soon! It looks like it will be in the next couple of weeks and we are excited to have him home again.

This Week At My House

This week.....

We started the week by watching a great Super Bowl. We are football nuts over here, and wanted to see a good game. This year did not disappoint. And this is how I watched it: with my fuzzy blanket and a glass of wine.

The next day we went up north a ways to pick up a goat for Nutsy.

This week we also had music lessons. Nutsy is really determined to master violin and practices 30-45 minutes every day.

One evening we had our 4-H Officer Meeting. These kids meet monthly and plan an agenda for our club meetings. Great life skills.

One day Bookworm came home from her class with this. This semester she is taking an intermediate art class and is really doing very well.

We have been getting an incredible amount of rain this year. As in, we are no longer in a drought, but now dealing with too much water. Here is the river near our house - it is usually quite calm and much lower.

Wednesday we had co-op - the kids learned about Saturn in astronomy, the signers of the Constitution in history, and we learned about proper letter writing in our writing class.

Now that we have a goat we are out there working with him and Nutsy is determined to work rain or shine. So here she is, in the rain, walking Canyon. She even gave him a scarf so he wouldn't get too cold.

And finally today, coffee with my oldest girl while we ran an errand. Having older children comes with its own set of challenges and I am working hard to continue to work on relationships with my kids as they get older.
