{#abcblogging} B - Brown Sugar Squares

This next recipe is a very special one to me.

When I got married, I made a point to have deliberate conversations with my mother in law about food. She is Japanese and made lots of yummy Japanese dishes for My Sweetie when he was growing up (another food post).

But one dish that My Sweetie said I had to learn to make was her Brown Sugar Squares. Which aren't Japanese at all.

These are just not any squares. For about a year I lost the recipe, so I looked different ones up online and they were totally different, and did not turn out like the original.

Thankfully I found the original again.

The first step is the crust.

Cream butter, brown sugar, and flour. This is pressed into a 8" square pan. I have tried making this in a 9x13 pan, and it just doesn't turn out the same.

This is baked at 325 for about 40 minutes. Online recipes only had it in the oven for 20 to 25 minutes. This was way too short- the crust got mushy and blended in with the other layer.

Begin checking it at around 30 minutes. You want it brown, but not too done.

The crust comes out of the oven to cool while you make the filling.

More brown sugar, and a couple of eggs are beaten together.

Flour, baking powder salt, and vanilla are added. Then you will need a cup of walnuts.

Here is the trick to this recipe: grind up the walnuts

All of the recipes I used online had you just chop them up. The recipe is so much better if they are as ground up as much as possible.

Mix them into the sugar mixture and then pour over the crust.

This goes back into the oven for 30 minutes.

When it comes out, sprinkle with powdered sugar.

Let it cool, and then cut into small, one inch pieces.

See the layers? You want the softness of the top layer, the denseness of the crust, and the sweetness of the sugar on top.


Brown Sugar Squares


1/2 c. butter, softened
1 1/2 c. firmly packed brown sugar, divided
1/2 t. baking powder
1 c. flour +  2 T. flour
1/4 t. salt
2 eggs
1 t. vanilla
1 c. ground walnuts


Cream the butter,  slowly add 1/2 c. brown sugar, beating well. Add 1 c. flour working mixture until almost crumbly. Press evenly into an ungreased 8" pan. Bake at 325 for 30-40 minutes. Set aside. Combine 1 c. brown sugar and eggs; beat well. Combine 2 T flour, baking powder, and salt. Stir in, and mix in vanilla. Spread over baked layer. Bake for 30 minutes and when it comes out, sift powder sugar over top. Cut into 1 inch squares.
