 This dinner of Green Chicken Thai Curry....

because who knew that something so green could be so delicious?

because even though it is just a club meeting, my children are learning important skills. Dasher is the Sergeant-at-Arms, Bookworm is the club secretary, and Mr. Lego leads the whole meeting as club president.

This trusty slow cooker....

because it was my grandma's, and is still going strong.

    And the Green Chicken Thai Curry is very easy....

    Saute green beans and onions in a wok with oil for 5-7 minutes. Add 2-3 T. of Thai green curry paste; saute another 3-4 minutes. Add a can of coconut milk, cut up cooked chicken, and 1/2 c. chicken broth and bring to a simmer. Cook until the vegetables are tender and the sauce gets thickened; about 5-7 minutes. Add a cup of chopped basil and 1-2 T of lime juice. Serve over rice.
